Backup sub folders

Just started using and checked the help but did not find specific answer. I want to make a backup of several folders within a main folder. In other words, I only want to backup specific folders and files under a main folder. I can do this in other apps but seem not to be able to find out how to do it here. I could create separate profiles but that seems awkward at best. Any suggestions would be appreciated.

In each profile, there is a setting:

Include Subfolders: NONE - ALL - SELECTED FOLDERS...

When you click on Selected Folders, you will get a selection dialog.

Selection of individual files is not available.
